Bring simple, delicious flavors to your table with this Mediterranean-inspired chicken dish. Our McEvoy Ranch Organic Herbes de Provence Olive Oil  adds a fragrant, herbaceous note that pairs perfectly with the fresh ingredients and tender chicken.


INSTRUCTIONS

  1. Preheat the oven to 425°F (220°C). 

  2. Add Herbes de Provence Olive Oil to a large oven-safe skillet over medium to medium-high heat. 

  3. Season the chicken thighs generously with salt and freshly cracked black pepper. Once the oil is hot, add the chicken and sear for 3-4 minutes per side, or until deeply golden brown. Remove the chicken from the skillet and set aside on a plate. 

  4. Add the shallots and garlic to the pan, cooking for 1 minute, until fragrant. 

  5. Pour in the white wine and increase the heat to high. Simmer for 2 minutes to reduce slightly.

  6. Return the chicken to the skillet, along with the cherry tomatoes, olives, rosemary, and thyme. Season with additional salt and pepper. 

  7. Transfer the skillet to the oven and bake for 15 minutes, or until the chicken is cooked through.

  8. Serve the chicken over couscous or rice and finish with a drizzle of Organic Herbes de Provence Olive Oil to complete the dish.
