Although the Petaluma Gap is a cool growing region, 2020 was a warm year. The 2020 Evening Standard is a deep ruby red color, with ripe berry fruit and a juicy mouthfeel, but also freshness and lively acidity. The naturally low yields give a wine with great flavor concentration, but not excessive tannins. Our style is to harvest at moderate maturity so that the alcohol, acid, and extract are in balance, and the use of older oak casks for aging gives the wine only the subtlest hint of oak, and preserves the fruit. Serve at cellar temperature with lighter meat dishes, poultry or even a rich but simply sauced fish. It is a great match with grilled salmon.
